Healthy Apple Coffee Cake

  • 4 cups cored, chopped tart cooking apples (about 4 apples)
  • 1⁄3 cup light brown sugar
  • 1½ tablespoons ground cinnamon
  • 3 cups flour
  • 1¾ cups granulated sugar
  • 1 tablespoon baking powder
  • pinch salt
  • grated zest of one orange
  • 4 large eggs
  • 1 cup vegetable oil
  • ½ cup orange juice


  1. Preheat oven to 375°. Grease a 10-inch bundt pan.
  2. In a small bowl, combine apples, brown sugar, and cinnamon; set aside. In a larger bowl, mix together the flour, sugar, baking powder, salt and orange zest. Using an electric mixer, beat the eggs and oil until creamy, about two minutes at high speed.
  3. Fold the egg mixture into the flour mixture; add the orange juice and blend again until moistened. Pour a third of the batter into the bottom of the prepared pan, then cover with half of the apple mixture.
  4. Pour another third of the cake mix over the apples and use a spatula to smooth, making sure that apples are covered completely. Repeat with the remaining apple mixture and batter.
  5. Bake for 60 minutes; remove from oven and cover pan with aluminum foil and bake for another 15 minutes. Remove and cool completely before serving.


Healthy Frappacino

  • 1 spoonful instant coffee
  • 6 ounces cold water
  • 8 ice cubes
  • 1 cup non-fat milk
  • 2 teaspoons artificial sweetener


In a blender, combine first three ingredients. Slowly stir in milk and sweetener.

Iced Mint-Mocha

  • 2 tablespoons fat-free chocolate syrup
  • ¾ cup freshly brewed coffee
  • ¼ cup low fat milk
  • dash of mint extract
  • 1 scoop crushed ice


Combine all ingredients in a blender until frothy.

Blueberry-Yogurt Ice Coffee

  • 1 cup brewed coffee, poured into ice cube trays and frozen
  • ½ cup frozen blueberries
  • ½ cup non-fat plain yogurt


Combine all of the ingredients above in a blender, and blend until smooth.

Winter-Spiced Coffee

  • ½ cup hot brewed coffee
  • ½ cup skim milk
  • 1⁄8 teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • cinnamon stick


Warm milk over low heat. Pour into a mug; add all other ingredients. Stir with the cinnamon stick. Leave cinnamon stick in the mug to further flavor the coffee.

Coffee Banana Soy Smoothie

  • 2 frozen bananas
  • 1½ cups vanilla soy milk
  • 1 8-ounce cup coffee flavored yogurt
  • ¼ teaspoon cinnamon
  • dash of ground nutmeg
  • 3 ice cubes


Chop the bananas into chunks. Put all ingredients in a blender; mix until smooth. Garnish with a dash of cinnamon and a sprig of mint.

Honey-Cinnamon Coffee

  • 2 cups hot, black coffee
  • ½ cup milk
  • 4 tablespoons honey
  • 1⁄8 teaspoon cinnamon


Heat all ingredients in a saucepan, stirring until honey is dissolved. Do not boil.
